What Is FIFO Food Rotation? + Free Template

FIFO (First In, First Out) is an inventory rotation method used in food service to ensure that older products are used before newer products. Proper FIFO rotation reduces food waste, prevents spoilage, and ensures food quality by using products within their shelf life.

What is FIFO?

FIFO means that the first items received (first in) are the first items used (first out). When new deliveries arrive, existing stock moves to the front, and new stock goes to the back. This ensures products are used before they expire.

FIFO Implementation Steps

  1. Date Everything: Label all products with receive date or use-by date
  2. Organize Storage: Keep older items in front, newer items in back
  3. Rotate on Delivery: Move existing stock forward, place new stock behind
  4. Check Regularly: Inspect for expired or spoiled products
  5. Train Staff: Ensure everyone understands and follows FIFO

Benefits of FIFO

  • Reduced Waste: Products used before expiration
  • Better Quality: Fresher ingredients in dishes
  • Cost Savings: Less product thrown away
  • Food Safety: Prevents serving expired products
  • Inventory Accuracy: Better tracking of stock levels

FIFO Date Labeling

Use-by dates should include: Product name, date received or prepared, and use-by/discard date. Many operations use color-coded day dots (different color for each day of the week) for quick visual identification.
